COLD BREW EARL GREY TEA W/ ORANGE SYRUP

Earl Grey tea: 30gr   Cold Water: 500gr

In a glass jar add the tea and cold. Stir until tea is full submerged in the water. Cover and let steep overnight.  Strained tea. Now you have a cold brew tea concentrate.

Orange Syrup:  Dried orange rind 50gr   Water: 250gr   Sugar: 250gr

In a pot add water and bring to a boil. Add in the sugar. Stir until sugar is dissolved. Lower heat to simmer and add in the orange zest. Let simmer for 5 minutes. Take off the heat and remove the zest. Once cooled, transfer syrup to a clean bottle.

THE DRINK:  Into a tall glass, ice + 30z cold brew earl grey tea + 5oz water (optional bubbly water) + 1oz orange syrup + orange peel for decoration.

 

MASALA  CHAI

Masala Chai Concentrate: 24gr Masala tea + 516gr water + 3 whole cloves + 2gr peppercorns +1/3 cinnamon stick + 1oz honey

Heat the spices to awaken the aromas then transfer to container. Add in the rest of ingredients. Stir until all ingredients are submerged in the water. Cover and let steeped overnight (8hrs).

THE DRINK: into a small pot add 4oz milk + 3oz tea concencetrate + sweetener (honey, maple syrup or sugar). Heat on low until all ingredients are smooth. Transfer to your favourite mug. 

 

DALGONA FOAM COFFEE OVER ICE

Making the foam coffee: 2Tbsp instant coffee + 1Tbsp icing sugar (or white sugar) +2Tbsp hot water

Add all ingredients into a mixing bowl. Using a hand whisk, mixed until coffee mixture stiffened to a soft peak (like whipping cream). Set aside. 

THE DRINK: Use any size glass and fill 1/2 with cold milk. Then scoop the coffee foam on top of milk to fill the glass. Stir well before drinking.
